Is it worth it to start with a Co-Ax? Or just Sim 1st then straight to HBFP v2?

1. As Nuttcaze and many others have said: Co-Axial's fly a lot differently than Fp's and CP's...
2. Do you already have a Transmitter and USB Cable you can use with a SIM???
3. How big is your place were you plan to learn how to Hover & Fly???
4. I only have about 8-ft by 8-ft actual space where I learned to hover and get in the air with... Lot's of crashes and buying spare parts...
Myself I'd go with a HBFP V2 because you will eventually wanna go outside and start flying and then when you get good with that Heli your gonna want a bigger & better one...

All depends...
If you just want to have an Helicopter, just to have it for a spare time in the office, but you are not going into the RC Heli world, where you will start to look for a CP and scales, or bigger Helis, or probably going into Nitro; then get a Coaxial.
If not, and you are planning all above I wrote, and you have the budget... get a HBFP...
